From Grain to Loaf: BIGS-DR Students Explore the Art of Sustainable Baking at DLS Vollkorn-Mühlenbäckerei

A group of 15 BIGS-DR students visited the DLS Vollkorn-Mühlenbäckerei in Hennef, renowned for its organic, high-quality bread. Founded in 1991 by David Lee Schlenker, DLS emphasizes sustainable agriculture and community involvement. They source local organic ingredients and mill their grains on-site, ensuring freshness and quality. The bakery's commitment to traditional methods and local collaboration reflects the cultural significance of German bread, recognized by UNESCO as an Intangible Cultural Heritage. This dedication fosters a strong bond between the bakery and the farmers highlighting the importance of collective effort in producing exceptional bread in a sustainable way.
