Food and nutrition (in)security: the dilemma of urban households in Ghana
Malnutrition in all its forms is still a global challenge. Factors such as globalisation, trade openness and economic development have contributed prominently to a growing complex food system-raising concerns about quality, safety and sustainability. Developing countries like Ghana are experiencing a nutrition transition-where eating habits are changing to the consumption of more processed, sugar, salt and fat dense diets. This coupled with rapid urbanisation, sedentary lifestyles and still the existence of undernutrition is leading to the triple burden of malnutrition even within households. The overall aim of the study is to investigate the food and nutrition security status of urban households and how they determine their food choices. The focus of the study is to answer the following specific questions: What is the food and nutrition security status of urban households?; What is the effect of employment on time allocation to food preparation and on household malnutrition?; What is the role of seasonality on household dietary diversity and nutrition?; and what knowledge do consumers have about the nutritional value and safety of their food and does that affect their food choices?
Data from the Socioeconomic Panel Survey (SPS) conducted in Ghana (2009, 2013 and 2018) (questions 1 and 2) and a purposive panel household survey data complemented by food system mapping and stakeholders’ surveys and workshops in three major cities-Accra, Kumasi and Tamale in the southern, middle and northern parts of Ghana respectively (questions 3 and 4) are used in this study. Drawing on economic models like household time allocation models and revealed preferences models, multivariate regressions will be applied to address the research questions.
